Breakfast Casserole

2 slices of bread, any kind you prefer, toasted, cut into cubes
2- 4 oz. of cooked meat, either of these work- sausage, ham, bacon, chopped
*You don't have to use meat, I often leave it out. I've even used tofu!
1.5 cup of Swiss or mozzarella (set aside 1/4 cup for topping, later)
4-5 eggs
2 cups milk

Pre-heat oven @ 350
Spray 8x8 pan with cooking spray
Place bread cubes in a single layer.
Sprinkle even layer of the meat.
Sprinkle all cheese, except your 1/4 cup.

In medium bowl:
beat eggs
Add milk, salt, pepper, blend well

Pour egg mixture over your toast pan.
Sprinkle remaining cheese.

Bake for an hour, browned on top.

You can also add tomatoes, onions, spinach, mushrooms, etc, Sautee them before you add to the mix. Be creative!!!

**You can pre-make the night before, just add 10-12 mins to cook time!
